Rice Salad
Rocket Salad

RICE SALAD
salt to salt
½ cup wild rice
1 cup white rice
1 cup brown rice
2 tablespoons light oil
1 large can corn kernels
freshly ground black pepper
3 tablespoons chopped coriander
2 tablespoons apple cider vinegar
3 tablespoons finely chopped ginger
1 dessertspoon finely chopped lemon grass

Mix lemon grass, ginger, vinegar and oil, stand 24 hours. Drain corn, discard liquid. Cook and drain brown and wild rice together. Cook and drain white rice, add to other rice, add corn and 2 tablespoons coriander. Strain dressing, salt and pepper, toss lightly with salad, and garnish with remaining coriander.

ROCKET SALAD
300g rocket
100g snow peas
2 cups pitted black olives
1 cup broken macadamia nuts 
1 cup finely grated Parmesan cheese

Break rocket into big chunks. Cut snow peas in half longways. Slice olives finely.  Toss rocket, peas and nuts together, transfer to serving bowl.

Dressing
1 tablespoon honey
4 tablespoons cream
1 teaspoon dry mustard
2 tablespoons lime juice

Put all ingredients in a jar and shake till mixed. Serve dressing separately as some people prefer this salad dry.
